Try this easy to make and delicious side dish recipe. Tomato stuffed with cheddar cheese and potato is a side dish recipe can be served with naan or roti.
Tomato 4 nos.
Salt/pepper to taste
Cumin seed 5 gm
Onion chopped 15 gm
Boiled potatoes grated 40 gm
Cheddar cheese 40 gm
Green chili chopped 1 no.
Ginger chopped 5 gm
Turmeric powder ¼ tspn
Hung Curd 50 gm
Roasted channa powder 10 gm
Oil 10 ml
1. Wash, cut caps of tomatoes. Remove pulp & seed. Keep aside.2. Heat oil in a pan, add cumin seed and allow crackling. Add onion & saute.
Now mix in potatoes, cheese, chili, ginger, salt, pepper and turmeric. Saute for 2-3 minutes and remove. Allow to cool. Divide into four parts.
3. Stuff the tomatoes with this mixture & replace the caps. Secure with toothpicks.
4. Now make a marinade with salt, pepper, curd & channa powder. Coat each tomato with the marinade and marinate for 30 minutes5. Pre heat the Air fryer at 180° C for four minutes. Lightly coat the fryer basket with oil.
6. Keep the tomatoes in the basket and lightly brush with oil. Air fry at 180°C for 6 minutes or till done.
7. Serve hot.
