Rocket and Arugula Salad is a Mediterranean recipe. This salad recipe is a healthy and an easy to make appetizer made using rocket leaves, walnuts and red wine.
Pears 80 gms
Rocket leaves 40 gms
Walnuts 10 gms
Lemon 25 gms
Olive oil 30 gm
Balsamic 30 gms
Red wine 30 gms
Curd 10 gms
Salt 2 gms
Pepper 2 gms
For poached pears:
Peel and slice pears and cool in red wine.
Whisk balsamic vinegar, olive oil and lemon juice.
For salad:
Toss rocket leaves with vinaigrette dressing and season.
Neatly place poached pears around salad and top with curd and toasted walnuts
