Recipe of Zarda


Festive season is round the corner, and about time you start preparing. And if you are of the belief that rice is restricted to the main-course menu, then here’s a dessert prepared with rice.

1 cup rice
3/4 cup sugar
2 tbsp
pinch of cardamom powder
4 tbsp peeled and flaked almonds
10-12 raisins
1/2 tsp yellow food coloring or saffron strands

-Soak the rice for about 30 minutes.
-In a sauce pan bring the water to boil and add a few strands of saffron and cardamom powder to the water.

-Now add rice properly cleaned and drained and let it cook on medium heat.
-In a separate pan heat ghee, add the raisins and let them swell up and then turn the heat off.
-Take another pan and start layering, first put half the rice, then spread a layer of dry fruits, again add the remaining rice, followed by dry fruits. Top it with ghee and raisins.
-Now turn on the heat again and let the rice and dry fruits settle.
-Cover the pan with a cloth followed by the lid and put it on very low heat for about 15 minutes so that the rice gets steamed nicely. It is ready to serve.
