Almonds with this Chunky Badam recipe


Earlier this year, a survey by market research company Ipsos said, “For majority of young and affluent adults snacking is an expression of happiness. When young and affluent Indians are happy, 97 per cent of them prefer to snack on almonds, followed by fruits and other dry fruits”. Seems like almonds are an absolute favourite and even among the urban middle-class, the dry fruit is a regular in most households. This consumption pattern is an indicator of healthy snacking if nothing else.
If you are bored of the same old, same old then, you can spice things up a bit with this Chonkey Badam recipe by Chef Kunal Kapur, Masterchef India judge. Healthy food need not be boring, you know!
2 tbsp – Oil
1 tsp – Jeera
1/2tsp – Hing
1 – Dry red chilli
3 tbsp – Kasoori methi
1 tbsp – Ginger garlic paste
1/2tsp – Turmeric
2 tsp – Coriander powder
1 tsp – Red chilli powder
3 tbsp – Tomato puree
1/2 cup – Almonds blanched and peeled
1/2 cup – Green peas
1 tsp – Salt
* Soak kasoori methi in half a cup of water.
* Heat oil in a pan and add dry red chilli powder to it. Sprinkle jeera and hing and sauté till jeera crackles.
* Add ginger garlic paste and sauté for another 2-3 mins. Now add turmeric, coriander powder and some more red chilli powder and stir on low heat for a minute.
* Remove water from methi by squeezing it and add it to the pan. Add fenugreek seeds to it and cook for 3 mins. Add a little water so that the masala does not stick to the bottom.
* Now add the almonds, peas and salt and stir it well. After a minute, add the tomato puree and a little water and cook on low flame for 5 mins.
* Serve hot.
Eating moderate amount of almonds daily right from childhood can boost overall health and also drastically improve health later in life.
